Q. Dieting is difficult for me becaue my family love fatty sauces and gravies.
How can I give them what they want and at the same time,
reduce the fat in these foods?

A. In order to lose weight you have to reduce fat and replace your everyday bad eating habits with healthier choices. However, that does not mean having to eat boring food. The following are some tips which will help you reduce fat when making sauces and gravies:

  • Store liquid in the refrigerator until the fat solidifies on top, then skim off. If you are in a hurry, add some ice-cubes to the liquid and the fat will rise to the top, the skim off.
  • Replace full-fat milk with fat-free milk.
  • Replace cream with low-fat sour cream, fromage frais or low-fat yogurt. If using yogurt, add 1 tsp cornstarch to prevent it from separating.
  • Use more tomato based sauces.
